The wine is made from the grapes Corvina, Corvinone and Rondinela. After harvest, the selected grapes are dried in boxes for at least 4 months, whereby the weight is reduced by 40% so that the sugar and flavor content is concentrated. The process is called "appassimento", and is characteristic of the Valpolicella valley. After this, the must rests together with the grape must for 20 days, after which the wine is transferred to barrique for 18 months. The bouquet is strong, with notes of vanilla and dried fruit, while in terms of taste you experience an explosion of fruit nuances, including plum, prune, cherry enveloped in soft tannins from the long barrel ageing, which makes the wine balanced and pleasant. Enjoy the wine with strong dishes, mature cheeses or a piece of dark chocolate.
