The appassimento method is well known from many Italian regions and for our Corte Fiore, a large part of the grape material has undergone a partial drying for up to two months to increase the natural sugar content and concentrate the extract richness of the wine. The result is a very charming and drinkable red wine with a nice balance between the mouth-watering fruit of the Montepulciano grape, dark stone fruit, blackberry, dark kirsch and completely freed from over-extracted bitter notes and green tannins and with a roundness and drinkable taste style that calls for another glass! Corte Fiore Appassimento - is ready to drink and will be an obvious wine choice for all kinds of tomato-based, braised and simmered dishes, patate ripassate, hot pizza and pasta combinations.
